How to prepare the Potato Omelette (Spanish Omelette)
The potato omelette is one of the most traditional and famous recipes in Spain.

Ingredients:
- 5 fresh eggs
- 500 grams of potatoes
- Olive olil
- Salt
Instructions:
- Peel the potatoes and then cut them into cubes or dice. It is important to cut the potatoes into regular pieces so that they fry regularly.
- In a hot pan, put the potatoes with enough olive oil to cover them. Move the potatoes frequently. When the potato is soft, raise the temperature to slightly brown the edges of the potatoes.
- After frying, let them drain to remove the oil. Season the potatoes with salt.
- Crack the eggs into a bowl and beat them very well. Then place the potatoes in that bowl and move everything very well.
- Put the whole mixture in a deep-frying pan with a little olive oil. The pan must already be hot. Stir the entire mixture over high heat with a paddle. When the mixture begins to curdle, move the entire pan from side to side until the tortilla is curdled.
- Cover the pan with a plate and turn the pan upside down very quickly. Put the tortilla back in the pan to cook the other side of it. Cook it until it gets the texture you like the most.
You can eat the potato omelette alone or with a side dish, for example a green salad, tomato salad, fried green peppers or garlic mushrooms.
If you feel like it, you can also prepare the potato omelette with onion. In this case, follow the same preparation as above, but fry a small sliced onion in a separate pan. Then, mix the onion, the boiled potatoes and the eggs and then cook everything in the deep frying pan.
